Ok, ok, yes – I am a little behind, but I’m not letting that stop me! I made my August batch of cupcakes this weekend for a Chili Cook-off/Packer Party. I cheated a little bit and used a mix that one of my girlfriends gave me as a shower gift – Red Velvet from Williams-Sonoma. The cupcakes turned out beautifully – perfectly rounded tops and just as yummy as can be! If I’m ever in a cupcake pinch, I’ll definitely be hitting up W-S for a mix.
In the spirit of Packer football – I used the Touchdown cupcake kit from my 12 months of cupcakes stash. The liners are absolutely adorable – half sport the Guest score (24) and the rest show the Home team winning with 33 points! The toppers have cheerleaders with poms, footballs and helmets. So cute! I made the frosting suggested by the W-S mix – a rich cream cheese frosting. SO good (and easy)! I colored it green like a football field (or for the Packers, depending on how you look at it).
