Eleanor’s 1st birthday has loooooooong passed, but I still wanted to share a bit more about her Berry 1st Birthday Party! Food of course was a party essential, and since I was planning, there obviously had to be plenty of sweets!
The most important sweet was Eleanor’s smash cake – you can read more about how I made her “berry special cake” here!
Now, on to the good stuff! For the “big kids” in attendance, we had a whole spread of goodies to munch on – potluck meatballs, buffalo chicken dip, and cheesy potatoes, just to name a few! Here are a few of my favorites:
My mom and dad made a delicious Five Bean Salad especially for Eleanor’s BIG day! It was light, fresh and a total hit with all of our guests! I didn’t help make this one, but they promise it was a breeze to throw together! Try it yourself:
Grandma Julie’s Five Bean Salad
1 can green string beans
1 can yellow string beans
1 can red kidney beans
1 can black beans
1 can garbanzo beans
1 1/2 stalks celery, cut up
1 red onion, diced
1 green pepper chopped
1/2 red pepper chopped
3/4 C sugar
1 1/2 tsp salt
3/4 tsp pepper
3/4 C salad oil
1/2 C cranberry pear balsamic vinegar (or vinegar of your choosing)
Drain beans and place in bowl. Combine celery, oinion and peppers, add to beans. Make dressing by combining other ingredients. Marinade overnight in refrigerator. Stir several times between making and serving. Serve with a slotted spoon.
And last, but certainly not least, we have the sweets for the day! I have made these tasty little cheesecakes from Skinnytaste a few times before and have always loved them! This time I decided to add a strawberry lemonade glaze to the top in honor of our birthday girl’s theme. I just blended up strawberries, lemon juice and sugar! They were SO good!
And because no celebration of mine is complete without cupcakes, I whipped up an old favorite of ours – Cookies ‘n Creme Cupcakes! These always go super fast at parties, so I always make sure to save back one (ok, two) for myself ;)
Eleanor’s 1st birthday menu was pretty simple, but everything was incredibly tasty! I can’t wait to do it all over again next year!
