I’m SO excited to share this post with you today – these cookies rock! But more on that later…
If you’re not familiar, MyOatmeal lets you customize a bag of oatmeal from start to finish. There are all kinds of flavors to add, not to mention awesome extras like fruits, nuts and seeds! Here’s the process:
1. Choose your quantity of oatmeal
2. Pick your oats
3. Combine your favorite flavors
4. Pick your fruits
5. Mix in nuts, seeds, & more
6. Sweeten it up
7. Shipment time – once, weekly, etc.
8. Name your custom blend
I decided to build a Carrot Cake blend close to the April recipe of the month. It contained: 5 grain rolled oats, carrot cake and icing flavors, chia seeds, and white cane sugar. It was DELICIOUS as a breakfast oatmeal, and I immediately knew it would be perfect in a cookie.
I made some tweaks to favorite cookie recipe and ended up with an AMAZING result!
Chewy Oatmeal Carrot Cake Cookies
- 1 cup all purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp ground cinnamon
- 2 tbsp unsalted butter, room temperature
- 1/4 cup sugar
- 1/4 cup unpacked brown sugar
- 1 large egg
- 1/4 cup unsweetened apple sauce
- 1/2 tsp vanilla extract
- 3 cups MyOatmeal Carrot Cake blend oatmeal
- 1/2 cup finely shredded carrot
Preheat oven to 350°
Whisk together flour, baking powder, baking soda, salt and cinnamon. Cream together the butter and the sugars.
Add the egg, followed by the applesauce and vanilla extract.
Stir in the flour mixture and the oats until just combined. Stir in the shredded carrot.
Drop heaping spoonfuls of dough onto baking sheets lined with parchment paper. Use wooden spoon to flatten each cookie slightly. Bake for about 10 minutes.
Cool on baking sheet for 3 or 4 minutes, then transfer to a wire rack to cool completely.
These cookies are super moist, super tasty, super addicting little treats! I know cookies aren’t exactly appropriate for breakfast, but these are mighty good with a cup of coffee :)
