Valentine’s Day is just around the corner. Cuddle up with your sweetie and this chilly, chocolatey dessert!

I’ve always thought Valentine’s Day is one of the best holidays. Sure, you could argue that it’s a totally fabricated, commercial day, but what isn’t to like about a day that’s all about spoiling the people you love, sending cheesy cards… and chocolate?

chocolate peppermint chillNebraska Furniture Mart asked me to make a dessert fit for those I love using these rich and creamy peppermints from See’s Candies. Dipped in milk and dark chocolate, these delicious patties were practically designed for celebrating Valentine’s Day!

nfm_5After sampling one (ok, like 6), I knew these little treats would be perfect in some homemade peppermint ice cream! I adapted this recipe for an easy, no churn option.

Peppermint Ice Cream

  • 2 cups Heavy Cream
  • 14 oz Sweetened Condensed Milk
  • 8 drops Red Food Coloring
  • 6 See’s Candies Peppermints coursely chopped
  • 1/2 tsp Peppermint Extract

  • Whip heavy cream and peppermint extract until stiff peaks form.
  • Beat in condensed milk.
  • Add red food coloring.
  • Fold in chopped candies.
  • Spread mixture in loaf pan.
  • Freeze 5 hours to fully freeze / 1-2 hours before spreading on brownie

chocolate peppermint chillTo finish my chilly dessert, I spread the peppermint ice cream on top of brownies baked in mini springform pans. You can use your favorite brownie recipe, or be like me and use the box kind ;)

This way, each of my Valentine sweethearts could have their very own chocolatey dessert!

chocolate peppermint chillIf you plan on spreading your peppermint ice cream on top of a brownie, you’ll only need to freeze the loaf pan for 1-2 hours until it’s slightly firm before fully freezing the dessert for another 3 hours.

When it’s time to serve, just remove your desserts from the freezer, pop them out of their pans, and let them sit on the counter for 10 minutes before enjoying. If you feel like getting fancy, add a cute holiday pick or some chocolate sauce!
