12 months of cupcakes: halloween edition

Hello & Happy Halloween!

Halloween is off to a great start this year! No dressing up for me this year, but I have had a blast getting Eleanor decked out in her little lion costume – she even gets into character with a ferocious ROARRRRRR :)

Tonight I’ll be handing out candy to the neighborhood kids during trick-or-treat. There are apartment buildings next to our subdivision, so I’m guessing we’ll have lots of kids – I can’t wait! In the meantime, here’s the latest installment of 12 Months of Cupcakes!

For my new readers, my 12 Months of Cupcakes project started when my sister gave me themed cupcake kits as a bridal shower gift. I decided to try a new cupcake each month and document my results. My October kit was one of my last – I just have a BBQ themed kit I need to use next summer. It’s been so fun to try new recipes and decorating techniques! Perfectly Pumpkin Cupcakes

This month I actually used a pumpkin muffin recipe that our family has made for years and just added some cream cheese frosting. They turned out beautiful and tasted just as great! I’d never frosted these before (since I’ve considered them more of a muffin), but adding the cream cheese frosting was the best decision I’ve ever made. These definitely deserve cupcake status now :)

I piped the frosting and sprinkled just a bit of pumpkin pie spice on top to finish the look!

The cupcake kit was adorable too – orange and black wrappers with 4 different ghoulish characters to top it off!

Eleanor likes to be right in the middle of the action these days, so I set her up in her high chair while I baked. She loved playing with (aka: chewing on) the measuring cups – what a BIG helper!

I followed through on my Temptation Tips my making my treats from scratch and getting rid of the excess cupcakes within 24 hours. After the obligatory taste testing was done, half of the remaining cupcakes were taken to my parents’ house and the rest were frozen (unfrosted) to enjoy at other time.
