Hey hey! I hope you had an awesome weekend and are ready to tackle another week! With the 4th of July holiday coming up, it’s hard to be upset about another Monday ;)
Our weekend was the best in awhile! We road tripped to Iowa on Saturday to spend the day with one of my high school friends who recently bought a house out in the country. Eleanor got to meet some chickens, horses, and cows – I think she’ll be yelling “come boss!” all week, haha!
On Sunday we went to church, met up with friends for lunch at Whole Foods, and spent the afternoon outside enjoying the milder temps.
Patio weather obviously requires snacks, so I decided to try out the multigrain tortilla chips Stonyfield sent me from Late July. I whipped up a lightened up version of Mexican Layer Dip using greek yogurt. It was AWESOME – perfect with the sea salt chips!
The recipe said it would feed 4, but unless you’re hosting NFL linebackers, you could definitely use this serving size for a party (not that I’m complaining)! I think I’ll bring this dip to our 4th of July festivities this weekend.
Aside from snacking on chips, Eleanor spent the afternoon playing with her new Daniel Tiger figurines – she hasn’t put them down since we bought them. Keeping a toddler occupied can be impossible sometimes, so these little characters are the BEST money I’ve spent in a long time! It’s so cute to hear her play make-believe with them too – it seems as though Katerina Kittycat has a problem with pinching the others ;)
Everly was a little fussier than normal since her shots at her 2 month appointment on Friday. She managed to crack a smile for me when we were playing on the deck though. Maybe she was just happy we finally replaced the batteries in her bouncy chair ;)
We have a fairly low-key week ahead of us, but I’m already looking forward to 4th of July fun. It’s always nice to have a long weekend with Jeff! :)
